On January 2nd I made a pledge to have something green on my plate at every meal. I’ll showcase some of the greenery I’ve managed to put on my plate throughout the year here.

Layered salads are a pretty standard lunch for me – if you have not already spotted the trend. This one is cabbage, shredded broccoli, chick peas, cilantro, yellow pepper, green beans and millet. I topped the whole shebang off with home made guacamole with loads of lime.
Amazing green juice displayed in a wine glass. Made with my basic green juice recipe; cucumber, celery, kale, lemon, pear, ginger, cilantro and parsley. I made this juice with a second hand juicer I just purchased for my friend. Another juice convert! Whoot!
Layered organic salad with shredded broccoli, kale, sprouted rice mix, radish, sunflower and pumpkin seeds topped off with a home made hemp lemon thyme salad dressing.

Love it or hate it, cilantro is one of my personal faves. I add it to wraps, throw it into salads and add it to my morning green juice. High in chlorophyl and flavour this is a great green to add to your diet.
Kale is something I eat every day – if you define juicing as eating. In my morning green juice I add 3 – 4 leaves of curly green kale.
Instead of grabbing a coffee when you are rushing about – why not a refreshing green juice?
Romaine, brown rice, carrots, seeds and a dressing of lemon and hemp oil.
A sassy kale salad for lunch. Kale keeps great in a salad even if you put the dressing on before you leave for work.
Veggie burger, guacamole, kale on a gluten free pita with some ‘bean’ fries on the side. This was an awesome dinner.
