Gluten-Free Organic Waffles


I started craving waffles a few days ago.  I’ve used gluten-free pancake/waffle mixes before but I decided to try to make my own organic version from scratch.  I have to admit, for a first try, they turned out pretty darn good.  This recipe makes about 10 small waffles.  Be sure to store your unused organic flours and nut meals in the freezer so you can extend their life.


Gluten-Free Organic Waffles

3/4 cup Organic Sugar Free Almond Milk
2 tbsp Organic Salted Butter
3/4 tsp Organic Vanilla
Organic Lemon Juice (fresh – one whole small lemon and you can also add some zest if you like)
1 tbsp Agave
3/4 cup Organic Brown Rice Flower
1/2 cup Organic Roasted Almond Meal
2 tbsp Ground Organic Tapioca (I ground mine with my Japanese mortal and pestle)
2 Organic Eggs
Pinch Celtic Sea Salt
1 tsp Organic Baking Powder
1 tbsp Organic Cane Sugar
Small amount of organic cold pressed oil of choice for greasing waffle iron
1 cup Organic Blueberries (make sure you wash them – organic produce gets dirty too you know)
Organic Maple Syrup


Mix all wet ingredients and add in dry.  Let the mixture sit for 30 minutes before cooking.  Pre-heat your waffle griddle, mine is an old square electric waffle maker that makes two HUGE waffles.  I only half fill the griddle so the waffles are a reasonable size.  Give your batter one last mix and brush a small amount of oil onto the griddle before you pour in the batter.  I found the gluten-free batter took a little longer to cook and went from just perfect to just burned in the blink of an eye – so keep an eye on them as they cook.  Once they are golden, it’s time to serve them up with the blueberries and maple syrup.
