Going Greener

oe-kale-salmon-ricepastaThis week’s Gastropost challenge got me thinking I could put more organic green goodness on my plate each day. Although my husband and I enjoy fresh green juice most mornings and I have at least 3 additional cups of raw organic veggies each day – I think there’s still room to squeeze more greens in each day. Here’s my Gastropost New Year’s pledge; there will be something green on my plate at every meal I have control over in 2013

Please don’t cry foul on my caveat of having something green on my plate only for meals I have control over. I do a fare amount of business travel, attend a lot of conferences* and I’m regularly suprised at the types of foods served at business meetings. I brown-bag-it when I can but for the rest of the meetings – I am at the event planners mercy. God bless event planners I’m sure they cringe when they hear from foodies and people with dietary restrictions.  I know they need to literally ‘cater’ to the masses.  Appreciation aside; for everyone out there who orders bagel, danish and muffin platters for early morning meetings…

For those of you who don’t know about the National Post’s foodie division; Gastropost – basically you follow the Gastropost Gurus on social media and they send out weekly Food Missions. * About conference food; I have to call out the exceptional food that was served at TEDx Toronto earlier this year and the Canadian Organic Grower’s (COG) Conference. You have set the bar very high for conference noshing.

The meal pictured above is wilted organic kale with sautéed king oyster mushrooms, garlic, chillies, organic Tinkyada brown rice pasta and wild grilled salmon. Yeah, it was delicious and there were greens in it.
