Week 7 – Easy Peasy

With a very busy work week and family commitments to boot, I still managed to keep things under budget.  Now that the pantry and freezer have a decent reserve, it's quite handy to slip into the pantry and whip up something quick, nutritious and delicious for a very modest price. 

Pantry Quick Fix
While I was making bread for the week I whipped together a very quick yellow pea soup and served it with brown rice and tzatziki for lunch.   It was easy to make and oh so good.  As close as I can figure, this recipe cost roughly $3.50 to make and it makes 6 large portions.  Here's the unofficial recipe:

Quick Organic Yellow Pea Soup
1/2 large yellow onion finely chopped
2 medium carrots finely chopped
2 stalks celery finely chopped
salt, freshly cracked pepper
pinch dried organic lemon zestJerrys-Tzatziki
garlic to taste
1/2 tsp oregano
1 cup dried yellow organic split peas
4(ish) cups water
1/2 cube organic vegetable broth
Tzatziki ( I love Jerry's Fine Foods.  Sorry for the lack of a link but they are not on the web anywhere.)
3 cups cooked organic brown rice

Directions:
-  Saute all the veggies in a medium pot for 3 – 4 minutes
-  Add spices, split yellow peas and water
-  Bring to a boil for 5 minutes
-  Turn down to simmer until peas break down into a smooth soup (about 1 hour)
-  Check seasoning

Plate it up:
-  Place a 1/2 cup of cooked organic brown rice in the bottom of bowl
-  Ladle soup over top
-  Add a heaping tablespoon of thick tzatziki on top (don't stir in)
-  Put a few dashes of hot sauce around the tzatziki
-  Enjoy!
